Jook Korean Porridge
Jook, a nutritious and savory rice porridge is one of the many porridge varieties offered in Korea. It's easy to digest, low carb and is very good for people who are recuperating. One of my favorite Korean chefs, Maangchi, has a list of traditional porridge recipes. The recipe below is vegetarian and super easy to make!
Ingredients
- 2 cups of water
- 1.5 cups vegetable broth
- 3 tablespoon soybean paste
- 2 garlic cloves, minced
- 1 1” ginger
- 1 cup mixed grain rice, washed, soaked in cold water at least 30 minutes
- 2 teaspoons sesame oil
Topping:
- ¼ cup of bean sprouts
- 1 soft boiled egg
- ¼ cup of mushrooms, sautéed
- ¼ cup of kimchi, sliced
- 2 scallions, sliced
- Sesame oil to drizzle
- Black pepper to taste
Directions
Heat up a pot or sauce pan and add 2 teaspoons of sesame oil
Add garlic and ginger for a few minutes
Strain the rice and add to pot. Stir about 3 to 4 minutes until the rice is sticky then add soybean paste
Add vegetable broth and water and cook for 20 minutes over medium high heat.
Stir the porridge a few times and turn down the heat to low. Cover and cook for another 10 minutes
Add all the toppings and drizzle sesame oil and you're done!
